CRAFT
Fresh makes all the difference at Craft. Our burgers begin with hand-formed patties and are prepared fresh to order with great care. Even our French fries and sweet potato fries are freshly cut by hand. Local and fresh, never frozen. These are the principles that make the AVI Fresh Grill one of a kind. We also serve up healthy options, including Turkey Burgers and Vegetarian Burgers,and express our creativity with weekly features such as Black Bean and Avocado Burger, Tempeh Reuben Burger, and Grilled Portobello Sandwich.

HOMESTEAD KITCHEN
Provides a rotating menu of contemporary homestyle comfort food entrées. Our team has developed recipes inspired by the unique spices and techniques featured invarious cultures and ethnic backgrounds to provide the comforts of home.

ROOTS
Focusing on whole, unrefined, or minimally refined plants, we incorporate a wide variety of fruits, vegetables, tubers, whole grains, and legumes in our recipes. Additionally we exclude or minimize animal proteins, dairy products and eggs, as well as highly refined foods like bleached flour, refined sugar and oil.

THE CARVERY
Freshness is infused throughout The Carvery. Our meat selections are freshly roasted or smoked and sliced in house, creating a fresh taste and aroma that makes each sandwich special.

CLARITY
Clarity meets the needs of our guests who have food intolerances by delivering an array of culinary creations that are free from common allergens, from self-contained food preparation to isolated storage spaces. From specialty gluten sensitive pasta options to hearty soup selections, Clarity provides a worry-free environment to enjoy your favorites!

TRATTORIA
Our contemporary and authentic culinary creations are created fresh with housemade pasta, dough and our own signature sauces. Our commitment to authenticity and quality is evident as our culinarians prepare our delicious pasta and pizza creations in plain view. You will taste the difference!

THE GALLERY
A test kitchen of sorts, our Exhibition Kitchen features mirrors above the chefs so students can watch the entire food preparation process. This kitchen is a teaching and training space, but also an entertainment space. The dining area will be set with counter-style seating of various heights, creating a gallery arrangement so students can fully enjoy watching and learning as our chefs perform.

NUTRIBAR
From traditional favorites to exotic produce and toppings, we provide everything needed to create a salad masterpiece. Our team prepares unique composed and grain-based salads inspired by recipes from around the world, as well as offering traditional favorites. Enjoy specialty salads and features including ethnic offerings like paella and couscous salads, plus pasta, bean, lentil and rice salads.

CREATIONS
Create your breakfast favorites any time of day! We provide the cooking equipment that allows students to create a waffle to their liking, with an array of fresh fruit toppings, nuts, syrups and more.They also can mix a special yogurt creation and we provide so many different add-ins that they can always design something new. Students also can enjoy a variety of their favorite cereals, can select from our fresh-from-the bakery cinnamon rolls, muffins, pastries, bagels, croissants, and assorted breads.

PETE'S BAKE SHOPPE
You will see our commitment to fresh preparation extends throughout our program - right to our handcrafted dessert specialties. To enhance the experience, we bring our baking out front with an open kitchen environment. Students will see first hand the careful crafting of our specialty selections. All of our tempting items are professionally merchandised to give our venue the look and feel of an upscale bakery.

PEAK PERFORMANCE
Enjoy this performance nutrition program designed to provide active individuals with the necessary fuel to support training, competition, recovery and hydration. By providing easy to understand nutrition education and seamless identification of our Peak Performance selections, we strive to make dining a simplified process for all.

Internal restaurant brands from AVI Fresh will be introduced to the YSU community in the Kilcawley Student Center.

Food Allergens and Preferences



Please report your food allergy or celiac disease or non-celiac gluten sensitivity to Richelle Bernardo, Resident Director, rbernardo@avifoodsystems.com prior to arrival on campus. Should a you need further assistance regarding food allergies or dietary restrictions, please contact Lindsey Kirila, lkirila@avifoodsystems.com our AVI dietician.

The student can meet with the dietitian and / or Resident Director of their dining hall of choice to learn how to safely navigate the dining locations and discuss appropriate dining options. The student is responsible for communicating any questions or concerns to the proper AVI team members in the dining facilities. We always recommend personal interaction with our management staff to obtain the most accurate information at the time of meal service.
